When I filet a fish I leave a bit of skin hooked to the tail so I can flip the filet and remove the skin by extending the first cut.

Down here in God's country, Southern Illinios we do a lotta Crappie fishin, we always just quarter them thow, ya know like a steer
I once caught a bass down in Nashville Il, so big that when I pulled him in the boat the lake level dropped a foot.
