SOmetimes I peep several heads of garlic and place it in a sealed moist container in the refrigerator....it keeps for a while in that condition. That way you can stockpile some ahead of time when you aren't in a rush.

THe garlic peeling gets easier with alot of practice and it sounds like you are getting lots of practice !! After a while you will be able to peel some of the cloves with your fingers instead of knife.

The garlic really tastes better when it hasn't been processed commercially.....but then don't all spices ? I grow many of the spices I use in my back yard........not the garlic because I wouldn't have any yard left...............just garlic patches!!!
