I've eaten wild salmon only once, and boy is it far superior to the fatty farmed stuff. I envy you. Though May here is a veritable lobster festival. I buy the meat for about $20 a pound and make hot lobster rolls, just sauteeing the meat in butter and serving it on a grilled hot dog roll. I'm sure each one takes a day off your life, but what a way to go.
