OMG, you eat salmon for breakfast? Wow. I think I'd be an egg freak if I tried low carb again. Have you ever tried the low-carb breads out there?

Did you go through the whole ketosis thing?

About a savory oatmeal dish:

How about a Mexican version: Using the oatmeal as a base a la refried beans, layer it with soy sour cream, chopped scallion, chopped green pepper and salsa, then pepper jack and bake it?

I could even see trying it as a basis for an asian dish. Instead of lo mein noodles, use oatmeal as a base and top with extra firm tofu, sliced mushrooms, bok choy and sliced ginger that you've stir-fried together and added soy and rice wine vinegar to.
