Our gravy is fattening... no way around it. But it seems to work out every time:
- When I start the turkey in the oven, I put water in the pan holding it and also put the giblets in a pan on top of the stove and simmer them. You may need to keep adding a bit of liquid to the turkey pan... should always be liquid in there.
- After everything is done, I pour off whatever is left in the bottom of the turkey pan into a large container. You can add the giblet water also. I pour the fat on the top into a frying pan (you don't have to use it all... either discard or save for other uses any you do not want) but there should be enough to coat the bottom of the pan with some fat liquid remaining for the flour. Not enough fat? Add butter... or oils like olive. The rest of the juices you set aside.
- I heat the frying pan very hot but not enough to smoke.
- Sift in a couple tablespoons of flour.
- Let the flour cook in the fat... mix around with a wire whisk.
- When the flour begins to brown (actually turn a very light tan) I add the reserved liquid (not fat) but not all at once. Be careful because the liquid will hit the hot fat and tend to splatter... Also, you do not have to work with a light tan flour... you can leave it pure white by just letting it cook a minute or 2 to make sure the fat and flour are incorporated!
- Keep stirring until it is really thick and then add some more liquid... not all at once.
- repeat until the gravy is how you like it. I adjust the heat so it doesn't boil too rapidly or it will get away from you and burn.
- if for some reason you run out of liquid (not fat), use water. You could also use milk if you want.
Just pour into the gravy boat and wait for the rave reviews cause it is great gravy!
