Of course some of us believe that a vegetarian diet is an unnatural and unhealthy diet and have no intention of resorting to such so that the family down the street can have their 5th child!

I am thinking that approach works best in a semi-large community (100,000 or more).

Here there are at least three for-profit establishments.

Natures/Wild Oats
Whole Foods
New Seasons

There are also two Food Co-ops.

In Eugene, a college town, population 100,000, has a number as well as a few organic food processors.

Sounds like a great opportunity available to you and the passion to carry it through.
