Actually, I lived as a vegetarian for a couple of years as a student. The cooks in the house where I lived were Canadian hippies. The food was great and I never missed eating meat and stuff. The meals took lots of preparation. They were excellent though.

I do not think there is more preparation required as far as my life is concerned...especially now that the "natural food stores" offer so much variety and many items that are convenience foods that can be rapidly cooked and eaten.

For instance, two nights ago, I prepared tofu and rice...

I think it took all of 2O minutes.

Delicious!

I find however that there is no substitute for exercise. I consume too many empty calories that work against my waistline....and my love for bread is no help either.
