You literally ate a pound of cheese a day? Geez, I don't think I could breathe if I did that.

I'm finding that I'm eating much healthier without sweets and carbs.

Did you control cholesterol with diet alone? If so, what type of diet?

If you have a hereditary cholesterol problem, you can add a strong lecithin (high PC component) and a lot of black tea. Both will serve to keep the placque circulating rather than laying down on your blood vessels. You can google it or go to pubmed to find some studies. I'm sure you're doing other stuff too but might think about adding those in for protective measures (won't affect your cholesterol readings, will just keep it in a different form).
