I can only assume this "Hebrew religion" is something different than Judaism, because I have studied the latter a little bit and the daily restrictions are quite stiffling - no shellfish, no pork, no dairy products with meat, etc etc and I am not even going to talk about the Saturdays when you are not supposed to be doing ANYTHING.

What I do admire the Jews for is that they have never created a clergy caste whose word is law. And if they have gone through a "Dark Ages" period (like the Christian Middle Ages and the Muslim 20th-21st century) it was probably so early that nobody remembers it. But I find it difficult to admire Judaism for freedom of actions, because I find it rather restrictive.
