Wondering whether pros are shelling out 3 or 4 grand for a multi-gig CF card or whether a pocket full of 512 MB cards suffices. Don't see the logic in the giant cards.

I don't know anyone with anything bigger than a gig card. Most I've talked with work with a combination of 512s and 1Gs. I have nine 512s, nothing bigger: I like to put my eggs into as many baskets as possible — 512 is just right, for now. Once I get the Canon 1D Mark II I may reconsider and get a 1gig card or two of them. Will see, after playing with the new toy for a while. Definitely not going for anything larger than a gig, for a long, long while: don't need it, don't want it, way too expensive.
