The best clam chowder I ever had was on Cape Cod...

The most important thing I've found is to eat what a region excels in. For example, don't go looking for Mexican in France ! Or even a good clam chowder in France for that matter, but I've never had bouillabaisse like that at Le Vieux Port in Marseille anywhere else.

Another important point is whether there is a living ethnic community in a region or not for finding authentic foreign cuisine. Thus, here in Palo Alto where I'm located now, forget about any authentic Italian restos like I grew up with in NYC or the North End in Boston. But there's lots of excellent asian and indian here. Perhaps surprisingly, really good Mexican is not easy to find... of course some cities are above average for food, Berkeley is far better than on the Peninsula (if you can stand the political climate, LOL !)
