I think it's nothing more than "FIber Optic Service."
They filed for two Service Mark(s) earlier this year ("Verizon FIOS" and "FIOS").
Fios also happens to translate from Irish to English as "knowledge." ( englishirishdictionary.com )

PS I'm sure we could speculate what it ought to stand for ;o)
