My new favorite fish is rockfish (striped bass), which are local, so usually fresh. Delicious just roasted whole. Use an extra plate on the side to hold skin, bones, fins, scales, head as you eat. I will happily eat an entire roasted rockfish, with a dozen raw oysters as a starter.

Rockfish is not as delicate as perch or walleye, but very delicate, and a creamy, meaty texture. Freshness is all when it comes to fish.

ISH - Walleye has to be one of the easiest fish to fillet and leave zero bones. Easy and fast too! Don't forget, on a decent size walleye, cut out the cheek meat and skin it. I know guys that would fight for the cheeks!
