"e.g, something that is "half horse" and half some entirely different specie."

Every horse today has three toes, the main toe is what we call the hoof, the other two are laid into the cannon bone on each side of the leg, and sometimes pop out when stressed. These are called splint bones and harken back to an ancient three toed ancestor.

There is also a prehistoric horse in Europe called the Przewalski horse which is more or less an ice age era horse.

The Arab horse of today has mutated to have one less vertebrae than other breeds of horses.

The jungle cousin of the horse the Tapir is another example of evolution branching out and stopping for a few millions years.

The horse is actually the best and strongest case for evolution.

the fossil record contains no examples of one species gradually morphing into an entirely different species

What constitutes a species? There are bunch of theories on this if I remember my biology 101. One of several, defines a species as a reproductive community. If the populations breed with each other they are the same species. That's pretty hard to tell from fossils.

"half horse" and half some entirely different specie.

That's not how it works. That's greek mythology except maybe in plants where hybridization does occur..

Evolution does not work on an individual level. It works on the gene pool.
