The problem is that, from an evolutionary POV, early humans were largely scavengers when it came to meat consumption and tool making allowed humans to eat marrow from the bones (very high in fat). This is born out by the fossil evidence.

Bottom line: fat tastes good to our taste buds and sends a message to our brains - "Hey, this is good. Eat more." While a good strategy when you and your family unit is hanging on the brink of extinction, in a time of plentiful food, it is absolutely the wrong message.

I'm sure the oil KFC fries their food in is ONLY the highest quality! And they change it regularly! Not.

Heating oil and keeping it there at elevated temperature makes permanent chemical alterations that contribute to heart disease, probably by making it too difficult for us to digest.
