That is really exciting and it looks incredible. We want a full report. Take notes.

Why I am a crappy cook:
After looking at the French Laundry menu, I couldn't stop thinking about one of the items on it-- the Roquefort Shortbread with pear relish-- so I went looking for something to satisfy my burning desire to have this item.

ramekins.com

Nutty Blue Cheese Shortbread served with Whipped Cream Cheese and Pear, Zinfandel and Currant Conserve

Perfect.
But after reading it through a couple of times, my initial enthusiasm began to dim.
That conserve is a lot of work.
And you have to whip the cream cheese.
And what a waste of good zinfandel.
And I've never been able to use a piping bag successfully. I just get big blobs exploding randomly around the kitchen.
Chervil? Garnishes have always seemed so superfluous to me. That sounds like the name of a household pet anyway. Chervil the gerbil.

Maybe I will just buy a wedge of good Roquefort and a pear.
