I believe the Torah, or at least parts of it were first put to paper (or whatever it was they wrote on) at about 950 BCEm during the reign of Solomon (961-922), which was about 300 or 400 years after the exodus from Egypt. Revised and expanded by "E" in 850-800. The "P" text was added in 550-500 and final revisions to the Torah by the so-called Redactor in 400 BCE. This is Harold Bloom's timeline.

Deuteronomy about 640-600BCE.
Ezra and Nehemiah 450-400 BCE...
The canonization of the Hebrew Bible completed 90 BCE.
