I would expect your temps to drop precipitately over night. It is cold and raw here today.

I use a marinade of Yoshidas original sauce and lots of garlic on my steak. Marinade for 3-4 hours. Hubby uses onion pwd, garlic pwd, salt, pepper on his and rubs it in about an hour before he grills. We let our meat sit out at room temp for about an hour before we grill.

Tent.....alum foil completely sealed around plate of steak for 5-10 minute after grilling. This is a very important step. It keeps cooking look it up.
