Sorry to hear that you (and everyone else, apparently) are ill.

When you get better, make yourself a cheesecake. (I think I posted this to DAR once, but I doubt anyone tried it. It is VERY GOOD indeed.)

The Smoothest CHEESECAKE On Earth

Crust:

1 package graham crackers rolled into crumbs (makes about 1½ cups)
¼ cup sugar
5 tablespoons melted butter

Filling:

2 8-ounce packages cream cheese (softened to room temperature)
2 eggs
½ cup sugar
1 teaspoon vanilla

Topping:

1 cup sour cream
¼ cup sugar
1 teaspoon vanilla

Preheat oven to 375° F.
Mix crust ingredients and pat firmly into the bottom and 1/3 of the way up the sides of a 9" spring form pan.
Beat filling ingredients with a rotary beater or electric mixer until satiny and pour into crust.
(This marks the difference between a good CHEESECAKE and a great one: don't stop mixing before it gets 100% smooth and satiny. Patience is the key - absolutely no clumps, however minute, is the goal.)
Bake 20 minutes, remove from oven, and cool 15 minutes.
Meanwhile, raise oven to 475° F.
Blend topping ingredients and spread gently over cheese filling.
Return pie to oven and bake 10 minutes longer.
Cool in pan to room temperature, then cover with foil and chill 10-12 hours before serving.

Serves 10 (about 430 calories per serving)

The best part of being sick is definitely the part when you get well, but not so well that you can't stay in bed (and no one will say "So why are you in bed reading when it's such a nice day..." )

Anyway, you will really like the book Spending, i think. It's by mary Gordon. Have you read it? It's one of those books. Those really good books that you realize is very good from about the first page. You go along reading ordinary satisfying books, and then suddenly you read a few pages and think "Hmmm, this is VERY good". It's one of those books, or at least it is for me. Unfortunately I think I will be finished with it soon. It's one of those very good books that is also fun and fast to read.

My S/O caught it again - this time with a vengeance. Because I don't ever want it again, I've avoided him like the plague, sleeping in the other bedroom, washing my hands if I touch him. LOL This morning, he looked dreadful, so I told him he HAD to go to the doctor, which got his back up. Finally I said I'd make the appt for him. I did, he's at the doc's. Hope they give him a bunch of stuff that knocks it out quickly. I'm also drinking lots of Emergen C - about 2,000 mg/day. Thirty packs to a box - $8.49 at Target. I love Target.
