Don't let the instructors teach the snow plow.....or pizza, or what ever you want to call it. Insist on a level 4 instructor that will teach parallel skiing. (I know it's a bit late, but didn't think to mention that)

Your kids will learn much faster and advance rapidly if they do get a level 4 instructor. It might be a bit more expensive in the beginning, but they will need less instruction and be off on their own faster.

Then the three of you can get into the hot dog mode and really start having some fun.

And I wouldn't make any commitments until next Dec or? You want to go and spend your money and time at a resort that actually has good ski conditions. That could be Colo, or it could be Tahoe or maybe even Wa?
