John, I am a BIG oyster fan.
Have had my share of oysters in France, Holland, Japan
and even in Denmark back then (mid 60s) when the Limfjord belons were arguably the best oysters in the world.
That's before those Danes killed them off by letting the
local industries incl. Bang & Olufsen drain their sawers
right into the oyster banks.

The best French oysters are their belons, not their claires or huitres.
It's just unfortunate that the US clients prefer the oysters
washed out (no "fishy" taste) and then a serious dose of Heinz
right on top of it.
Thus the US oyster "culture" isn't quite up to where it could be based on good supplies from the East Coast.

In Japan I have had great "monster" size oysters, really needed to cut them up in three pieces to gulp them down.
My in laws believed I were crazy to eat them "nama" (raw, alive) because in Japan they mostly serve them deep fried.
