Yes, I did cover the chops while they simmered. They were also fully thawed, but refrigerator cold when I started them. In my heavy cast iron skillet they seemed to come to a simmer very quickly. Nonetheless, they tasted fine. It was just more "messing" with than I care for.

My wife used to fix sweet and sour chops in the crock pot. They were to die for and I can't find the recipe anywhere. That was an all day affair, but it was worth the wait. She would always fix them when our son came home on leave from his Navy career.
