You may have missed my recipe for Austrian pancakes:

Ingredients:

3 eggs
1 cup all purpose flour
1/4 teaspoon salt
4 tablespoons of Splenda or sugar
2 cups of 1/2 and 1/2
2 tablespoons of butter

Mix all the flour, Splenda, and salt in a mixing bowl, then add the eggs and 1/2 and 1/2... mix well with a wisk for about a minute or until everything is well combined...

Heat a 10" omelette pan with the butter...

Pour the batter into the pan...

I like to sprinkle the top with cinnamon and crushed walnuts...

Then put the pan into a preheated oven at 325 for 35 minutes, do not open the oven during those 35 minutes...

When you remove from the oven, the pancake will have risen several inches just like a souffle, but it will flatten within minutes, that's fine, so have everyone in the kitcken when you remove it from the oven, it makes for a great presentation...

Serve with whipped cream as a topping (you could also eat it without any topping) and enjoy!!!
