Good observation. An Italian doctor has made a lifelong study of the benefits of CLA, which is highest in Swiss Bergkase cheese. (similar to Emmentaler). It apparently can reduce the nitrate carcinogen effect in flame grilled meats. Australian beef is the highest in CLA worldwide.

We eat French and Irish butter, and much of it is from grassfed cows.

That's what I buy, lately French brand President. But I don't think it is grass fed. I didn't see any indication on the Irish butter, if it is grass fed. The one that is know to be grass fed is Anchor Pure New Zealand Butter, which can be ordered on-line, but I have not seen it locally in New York City. But I figured a way to buy it from Amish farmers.

CLA (conjugated linoleic acid) is a cancer-fighting fat that is most abundant in grassfed products.

Woody Allen character from the movie Sleeper would be in for more of a shock.
