Good observation. An Italian doctor has made a lifelong study of the benefits of CLA, which is highest in Swiss Bergkase cheese. (similar to Emmentaler). It apparently can reduce the nitrate carcinogen effect in flame grilled meats. Australian beef is the highest in CLA worldwide.

I read that somewhere. I wonder though how that was measured. If a large percentage of Australian cattle is grass fed vs. small percentage of US cattle, of course Australian cattle will be much higher in CLA. But what I wonder about is if a grass fed beef from the US is as good as that from Australia.
