That value is wild. I have known farmers to get rich or broke using the futures.

As one example, the USDA's estimate of world wheat production for 2008 is about 13 billion bushels. Today's CBOT exchange open interest on wheat is about 412k contracts, each contract representing 5k bushels, for a total of about 2 billion bushels. CBOT has, as a best guess, at least 70% of the wheat futures market.
