I think a restaurant for diabetics would work too. They would have to be more careful with portions and show the carb numbers in each. You would need to make sure the meals vary enough to draw them back. And the thing is it would be good for most everyone whether they were diabetic or not.

There is a restaurant here in Boone that has all organic food meals and a lot of vegetarian ones.

It's a little more expensive than other restaurants but the food is excellent.

A restaurant like this that would also have a diabetic menu would do well methinks.
