I live in Central Texas so I can basically grow herbs outside year around. Rosemary is very hearty and might grow in the ground up there... I recommend Tuscan Blue variety.

The only ones I grow in the ground are rosemary, dill, oregano, sage, and mint. I have many others growing in pots and will bring them in on the few nights we have a freezing temp.

Funny I am talking about herbs today... tomorrow I am going to Herb Fest in a small town. It is a great festival and there will be many herb plants for me to look at and maybe buy. There will be herb mustards, breads, cakes, etc. I usually buy some herb that is new to me, a food item, and a homemade birdhouse. ;-)

Car racing season is closing here and the money raising parties have started. Why do I mention this? Because you like to cook big and good and have a metalworks shop.

The parties are about cooked whole pigs, about 200 pounds dressed.

Now your part. A trailer on which 2 steel 55 gallon drums ride on. A top and a bottom are cut out and the drums welded together, then split length wise with a hinge in the back. A spit in the middle that turns slowly and 2 racks below that hold charcoal and can be slid out to reload.

Takes about 8 hours to do the hog before it's sliced and some beer consumed before it's done. Gotta mop the pig down once in a while. Put the meat on a bun with a dab of sauce.
