I believe when you mail or drop off your ballot, they verify the signature against their records and check off that you voted. Then they remove the security envelope from the outer envelope and deposit it in a container with the other ballots. That preserves the privacy of your choice. Once it is removed from the outer envelope, there is no way to identify whose ballot is whose.
