My favorite dark green leafy vegetable is Swiss chard. I've been back on a healthy diet since January 1st, and I'm going thru 1 packet of chard every 2 days or so. I steam a copious amount of it with other low-calorie vegetables like tomatoes, mushrooms, or asparagus, plus small amounts of starchier ones like onions, carrots, yams or squash. This is served with a medium portion of meat like poached salmon*, curried chicken/halibut, or beef fajitas.

The result is a plate where 3/4 of the bulk is low-calorie vegetables. This approach is helping me work off a few extra pounds I collected during the dark depressing days of November/December. ;)

*I'm fortunate to live near one of the best fish markets in the world with plenty of wild-caught salmon, halibut, rockfish, sole, scallops, shrimp, and crab. As a special treat I even scored some fresh sturgeon last week.
