I have struggled with assumptions about milk, too. I finally did the math and concluded that I should use cream in my chowder rather than milk of any fat content. Haven't tried it yet.

When you take the fat out of milk, what's left is carbs. Lotsa carbs in skim milk, all sugar. 12 grams of sugar in a cup. Heavy cream has no measurable sugar. You might consider a small amount of cream in your smoothies instead of the milk. A little goes a long way.

You need to have some fat in your diet. A low carb approach is not to add skim milk powder (I recall you used to do that), which adds both carbs and protein, but to add just the protein powder. Which is what I do. Whole milk + some protein powder + fruit.

When I do it for my daughter or my wife, I add some honey. For myself, I don't add any sweetener.
