Regarding your G-string intonation, if you can't get the proper intonation yourself, I recommend asking around to get recommendations on a good guitar setup technician. Ask the best players you can find where they take their guitars for repairs and setup. Then take your guitar there.

I found a local shop who will set the guitar up just perfectly, in accordance with my desires, for $40.

You may want to try a heavier gauge G-string, too.

G seems to be a problem on a lot of guitars - even ones that people pay a lot more for...

The intonation for some G strings seems to require a a wound G. Guild offered a choice of two saddles on some electric jazz boxes; one for wound and pne for unwound Gs.

The jazz players often like the wound Gs.

Gibson prices are unreal. A friend brought over an Epi LP she bought for $499 that had all the classic LP sounds you could ask for.
