My daughter and I fought over the last piece.

Josh's Mexican Cornbread

2 eggs

1 teaspoon of salt

1 teaspoon of baking soda

2-3 tablespoons oil or melted butter

2 cups of buttermilk

3-4 Jalapeno peppers minced

1 Hotlink Sausage minced

One can yellow corn drained well

2 cups yellow corn meal

Preparation...

Mix wet ingredients first and add dry and stir well

Grease pan and add 1 and not more than 2 inches of batter.

Bake at 400 - 450 till golden brown

Last part? the cooking temperture... or did have different ideas on what was golden brown? We cook cornbread at 425, after heating the iron skillet with a splash of oil/lard of your choice, then pouring in the batter, then pop it back in.
