I got my recipe on the internet.

Two cups proofed sponge
Three cups unbleached flour or whole wheat flour
2 tsp salt
2-4 tsp sugar (I use none or 2, as 4 masks the sourdough flavor, in my opinion)
2 TBLSP Olive Oil
cracked wheat if desired

Turn on oven for one minute to warm it. If the inside of the door is too hot to put your hand on it, it's too hot.

Put the kneaded dough in the oven to rise. I have some neat bread pans that my wife got for me cheaply at Walmart, but any glass or ceramic cake pan will do.

After it's risen 2x the original size, punch down and allow to rise to 2x again. I've found bread machines do not allow enough rising time, so I do mine in the oven now.

45 minutes at 375 deg F.

This bread is really worth eating, unlike store bought bread which tastes like fluff.
