Would this mean something like about 45 degrees from the grain direction? I'm not sure how to determine grain direction...

that's the ticket.

anything i grill over smoke, i generally make sure its had acid added. lemon juice, lime, vinegar whatever. smoke and citrus just go to gether in any meat marinade.

i wouldn't grill over gas, unless i could add some soaked wood chips. seems like a waste to me otherwise, and besides the whole point. which is to say, i've never understood why people gas grill. but, that's just me.
