Since you want your fry pan almost at the melting stage you will die of old age trying to do it on an indoor range top unless you have commercial equipment. And again I have quite the range fan for a home, I think I move about 600 cfm on turbo if I remember right but it's still marginal if generating a lot of smoke. Considering most home range hoods only move 250/300 then cooking in this manner outdoors is a good move.
