i can see that. especialy if sliced thin already.

but that's true of anything if you do that.

best corned beef in ny is graded by the thiness of the slice at the end. it cannot melt in your mouth unless sliced paper thin. across the muscle strings.

same with all muscle foods to one degree or another.

all get butchered the same way including humans. same technique across the board. absolutely no difference.

exo skeletons, things change a bit from the inside out or outside in from snails to lobster, conch to clams.

then there is "fish" lol.

and in between gelatinous things like squid, octo etc, with a bit of beak to take out and a spine.

so it goes.

in the harvest of the formerly living things.
