I won't make chili without chocolate. It just seems to bring all the flavors together. I often use unsweetened dark cocoa powder. I mix it separately with just enough hot water to form a paste, then stir it into the pot. The last ingredient is masa flour, also mixed to a paste first. Years ago I used to make a Mole, and absolutely loved it. But it was very time consuming(37 ingredients)and I don't have the patience anymore. I think Mole is the Mexican grandmother's equivalent to the Italian grandmother's tomato sauce or the Jewish grandmother's chicken soup. Every family seems to have a recipe that's been passed down forever.
