You need to strap yourself into a chair and watch American Idol and Oprah religiously. You'll be a blithering idiot in no time.

"I have other extreme beliefs as well; I'm a nutrition and exercise fanatic, but at least I still think that those work to my personal advantage (although it certainly added to the strain with my ex). I'm also a conservationist, tree-hugging nut - I'm making a conscious effort to adopt more city hobbies to cut back on the number of trips out of town in the Prius, I cycle to work every day rain or shine "religiously," buy my foods bulk to eliminate packaging (and save $), and I actually pre-soak my beans and pasta to conserve energy. Most people don't even devote two synapses to such minutiae. I think it's just some obsessive-compulsive gene from both of my parents. Why me..."

In many ways, you're not the weird one. Perhaps a majority of people on this planet live as you describe - less by choice than necessity. Undernourishment is a distressing reality and you're very lucky you have the choice of eating healthy and adequate food.

However, many folks are more physically active b/c they have to be. They aren't profligate with driving b/c they don't have cars. They get foods at what we call farmers' markets b/c that's all there is and packaging isn't an issue.

And...living with a smaller environmental footprint has been the norm for FAR longer than the three or four generations we've enjoyed in the West.

For your beans - if you don't already have one, get one of these: google.com

If you eat beans as often as we do, you'll wonder how you ever got buy w/o it!
