OT: We didn't separate out the leaf lard, this time. Part of it is that we're a low-pastry outfit due to gluten sensitivities, partly because we're still figuring out what the hell we're doing. :)

Totally with you on store-bought lard. Anything that can sit on a shelf for that long is dubious.

And OMG, the crackling that is left over after the lard process....WOW. Like crack for the primal set.
