My heart breaks for you! Pie crust made with lard is manna from heaven.

I have a butcher that I trust that I get the kidney fat from. I render it and freeze it once a year.

Do try pomme frites or even just nice little new potatoes. Kennebecs make great both. If you grow potatoes and haven't tried those you should. Oh! And home made potato chips are great.

I hoard the cracklings :-) make small growly noises if anyone approaches.
