Yeah, and besides the peppers and onions and bacon, also had shredded Mexican blend cheese in the middle.

One of my favorite recipes ala KLP is to take red, yellow and orange bell peppers (I don't like green) core them, cut into halves and then quarters. Do the same with an onion. Toss in olive oil. Braise in a hot (400 degree) oven for then minutes. Toss lightly and roast ten more minutes. Put onions and bell peppers into bowl, season with salt and pepper and lightly sprinkle with balsamic reduction.
