Making rice in coconut milk is one of our favorites. Great with a teriyaki stir fry or anything like that.

Well, I tried the scones from the site you posted.

They didn't turn out well. I didn't have all the dried fruit they suggested but I think the main reason they didn't work out is because my oven was too hot. I've had the problem before with cakes and muffins and should have remembered to adjust the heat.

I'll try them again any maybe take the temp down 25 or 50 degrees from what the recipe suggests.
