I'm trying to avoid rice, but will use coconut milk if/when i do make it.

Might try that. I make rice a lot. My new favorite rice is a perfect blend of Texmati brown rice, wild rice, wheat berries and rye berries.

I don't stir fry often so I'm thinking it might go well with coconut shrimp and a really crisp salad.
