The Gospels aren't versions, they're just different accounts reflecting what the authors or their sources witnessed and relayed. None of them set out to tell everything there was to know about Jesus, each chose what they wrote down for various reasons, some of them literary.

While Mark may be the oldest Gospel, it's not the oldest written NT material. That's thought to be Paul's letters, one of which, 1 Corinthians chapter 15, relates the risen Jesus' appearance to a number of people.

Yes, the resurrection is the heart of the NT.
