The fact that your blood sugar went up even though you didn't swallow is obvious and very easy to explain, it's certainly no mystery... swallowing is only part of the digestive process... the very FACT that you had any of that food in your mouth would immediately trigger the heavy release of saliva in your mouth... saliva is the very beginning of the digestive process, it immediately begins to break down the food into more easily digestible material... just a few seconds of "food tainted" saliva is enough to deliver sugar, and whatever else you placed into your mouth, directly into your system and very quickly into your blood stream, you can spit it out all you want but it doesn't make any difference, once the food is in your mouth, the sugars will get to your blood stream within seconds... forget about those fancy phrases, they're not necessary... the mere fact of placing any foods into your mouth will most definitely raise you blood sugar level almost immediately...
