what do they turn into and what were they before they were Finches.

Here is the most basic concept of physics: The past already happened and the future has not yet happened.
This has some very important consequences.
The past can in principle be known, the future can be guessed, but cannot be known.

When the environment for current finches changes, the descendants of current finches will either change to something that can survive, or they will die out. I don't know what they would change to since it depends upon what is different about the environment.

As to past finches, the great .... great grandparents of finches were theropad dinosaurs.
The immediate ancestors were a different kind of finch from South America.
Prior to that (by millions and millions of years) were some amphibian creature, a bony fish, and bacteria.
