mandarin is spoken just about everywhere in china, and cantonese is only used in guangdong province (admittedly sporting population of france+), hong kong and macau

should a scientist only be able to speak in cantonese, he best write everything out when he converses w/ his peers from non-cantonese speaking regions of china

same same for shanghainese, fukienese, hunanese, etc etc

so, for a student, he best learn everything in mandarin unless he is forced by circumstances to learn in cantonese

in hong kong, for those unable to attend private schools, cantonese is the teaching language, because the teacher's union mandate so, and so the kids are at a severe disadvantage from the get-go

in guangdong province, where the folks speak mostly in cantonese, the kids are taught in mandarin

should the kids in the majority in hong kong wish to have a future outside of very small hong kong, they best know mandarin and english cold, else condemned by the system
