Just fyi I don't use sauce for fresh fish fillets. I spread a teaspoon olive oil on the meat side and then season with salt, pepper, cajun seasonings and lemon peper - a light amount of each. Fresh fish grilled this way is so tasty it doesn't need lemon, tarter, butter or any other sauces. If the fillets are not fresh then yes I would want lemon or a sauce. If you see tiny milky white bubbles of fat exiting the fillet it's past done. I would still gently flip it (a salmon or steelhead fillet) and grill for a minute on the meaty side. If you're just using your grill pan for skinless fillets don't worry about flipping the fillets. But I would place a sheet of aluminum foil or a pie tin over the fillets. Steam some brocolli and have a delicous and healthy meal!

Regarding what's easier - I use my gas grill (nearly every day) and it's right outside my kitchen nearly as close as my stove and oven. It's ready to cook in fifteen minutes and there's no cleanup. I set plates on top of the grill cover and serve food on hot plates. All hot food tastes better on hot plates, imo.
