It was their major cash crop and British industry was heavy on textiles leading the Confederates to over-estimate their value to Britain.

As for your latter statement, the South adapted to the loss of slavery and cotton remained an important crop for a very long time.

Did you know that at one time, Natchez MS had more millionaires than New York City? In 1850, Natchez had over 500 millionaires, half the millionaires in America.
